Potol Dorma Recipe | Potoler Dolma Recipe | stuffed parwal Recipe in Bengali style. A great vegetarian dish and a delight if served for lunch or dinner with roti or pulka or rice. Very popular Bengali vegetarian dish.
Ingredients
- 6 – 7 Potol Small Size
- 1 Onion
- 6 – 7 Clove Garlic
- Small Size Ginger
- 2 TBSP Cholar / Channa Daal boiled in salt and turmeric
- 1 Tomato Big
- 2 TBSP Paneer Grated
- 7 Piece Kaju
- 5 Piece Kismis
- 4 TSP Salt
- 1 TSP Sugar
- 2 TSP Turmeric Powder
- 1 TSP Garam Masala Powder
- 2 Bay Leaf Small
- 5 Clove
- Cinnamon Stick Small
- 1 Black Cardamom Big
- 1 Cup Curd
- 4 TBSP Refined Oil
- 1 Green Chilly
- 1 TSP Red Chilly Powder
- Chopped Coriander Leaf
- 1 TBSP Ghee
- Water
Instructions

Step 1 : scrape potol, scoop out potol seeds add salt and turmeric

Step 2: add oil and fry potol and let it cool

Step 3: make a paste of scooped potol seeds, onion, garlic, ginger, 1 green chilly, channa dal boiled in salt and turmeric

Step 4 for stuffing : let pan heat add refined oil, potol paste, add salt and turmeric, add paneer mixed with small sliced onion and coriander leaves, add 3 kaju and 5 kismis sliced. Let it saute till the mixture separates from pan easily and binds itself. Let it cool down

Step 5: stuffed the stuffing mixture in fried potol and rest it for sometime

Step 6 make gravy paste: make a paste of onion, tomato, ginger, garlic, kaju

Step 7 for curry: add oil in pan, add bay leaf clove cinnamon & black cardamom, add gravy paste, add salt turmeric sugar chilly garam masala powder and let it sauté, add beaten yougut and let the oil come out of the paste the curry paste is fried properly. Now add stuffed potol, add little water and let it boil for sometime. Add chopped coriander leaf and boil the curry for sometime. Add ghee.
