Ingredients

  • 6 Brinjal
  • 1/2 Cup Groundnut
  • 100 Gram Coconut
  • 1/2 Cup Sesame Seeds (White)
  • Onion
  • 2 Tomatoes
  • Ginger Small Size
  • 5-6 Cloves of Garlic
  • 1/2 Cup Curd
  • 2 TSP Salt
  • 1 TSP Turmeric
  • 2 TSP Red Chili Powder
  • 1 TSP Jeera Powder
  • 1 TSP Coriander Powder
  • 1 TSP Garam Masala
  • 1 TSP Jeera
  • 1 TSP Mustard Seeds
  • 1 TSP Fenugreek Seeds
  • 6-7 Curry Leaf
  • 1 TSP Jaggery
  • 4 TBSP Oil

Instructions

  1. Cut Brinjal and dip in water for 15 – 20 mins

  2. Roast groundnut, coconut, sesame seeds and make a paste of it without water

  3. In the paste mix curd, 1 teaspoon salt, 1 teaspoon red chili powder, 1 teaspoon jeera powder, 1 teaspoon coriander powder, 1 teaspoon garam masala

  4. Fill the brinjal with the paste

  5. Heat oil, add 1 teaspoon jeera, 1 teaspoon mustard seeds,1 teaspoon fenugreek seeds, 6-7 curry leaf,1 onion, 2 tomatoes, small size ginger paste, 5-6 cloves of garlic paste.Add salt, turmeric,Red chilly powder. Add brinjal and mix the leftover masala, water and let it boil. Add Jaggery to balance the taste

  6. Now brinjal curry is ready to be served with rice, chapati/roti/ paratha
