Thekua is very famous recipe of Bihar in India. This recipe is associated with Chhath Puja, but generally people prepare this recipe when they are travelling, or they keep it as evening snacks. During festival it is prepared in several ways, like with jaggery, dryfruits, or with sugar and concoction of dryfruits.

Ingredients

  • 2 Cup Wheat Flour
  • 30 Gram Gud/Jaggery or as per Taste
  • ½ Cup Water
  • ½ TSP Fennel Seeds/ Saumph
  • 1 TBSP Coconut Grated
  • 1 TBSP Kismis
  • 2 TBSP Ghee
  • Refine Oil to Fry

Instructions

  1. Slice gud/ jaggery in ½ cup of water and leave for 10 mins or microwave it for 5 mins to dissolve it and make water consistency

  2. Add wheat flour, fennel seeds, coconut pieces and kismis pieces and mix ghee in it. Mix all the ingredients and rub it till wheat flour changes its color and texture.

  3. Mix gud water slowly and knead it in proper consistency – nor too loose nor to hard. The dough should be easily able to converted into a shape

  4. Divide the dough in small balls and then make designs on it as you wish

  5. Rest the small balls for 10-15 mins

  6. Fry it in refined oil/ ghee till golden from both the side

  7. Rest it to get cooler and then can be eaten
